For centuries people have known that not all hot chili peppers were created equal. Some were much hotter than others. Around 1912 Wilbur Scoville discovered a rather complicated way to measure the heat of the peppers. In today's world, we know the spiciness of a pepper depends on how much capsaicin it containes. However in the honor of his contributions, the heat of peppers are still measured in Scoville Units. A Scoville Unit is a measurement of capsaicin level or heat for a variety of pepper. Note that when peppers are dehydrated they tend to increase in Heat by about 10 times.
